Poland - Gingerbread cookies 

Ingredients: 
  • 2 cups (320 g) of plain flour
  • 2 tbsp. of honey, 2/3 cup of sugar
  • 1.5 tsp. of baking soda
  • 20 g (1 bag) gingerbread spice (most easily ready-made or homemade)
  • 2 tbsp of butter
  • 1 egg (+ additionally 1 egg for brushing)
  • approx. 2 - 4 tbsp. of warm milk

Preparation: 

Sift the flour on a pastry board, pour the dissolved hot honey and mix it (preferably with a knife). Keep chopping and adding sugar, baking soda and spices, then add butter and one egg. 

Gradually (by 1 tbsp.) add milk while kneading the dough thoroughly with your hand until it is smooth, plain and like shortcrust (may not use all the milk) - for about 10 minutes. 

On a floured board, roll out the dough into a cake about 1/2 cm thick. Use the molds to cut out the gingerbread cookies. Place them on a baking sheet lined with baking paper, approximately 2 cm apart. 

Brush the top with a beaten egg (not necessarily if you are going to decorate the gingerbread cookies) and bake in an oven preheated to 180 degrees for about 10 - 12 minutes, depending on the thickness.
